This cheese is available both mild and naturally smoked.
The smoking process takes place with the combustion of non-resinous woods. The taste is enhanced by the aroma of smoked wood that gives the cheese a more decisive taste.
The texture is very elastic and has great melting properties. If aged for longer periods the texture becomes slightly crumbly.
The rounded shape of this cheese makes it perfect for slicing and ideal in panini, sandwiches or burgers.
